Sam Clark - Head Chef / OwnerSam creates stunning but simple food using the freshest locally and sustainably grown produce. He’s enthusiastic about working with the seasons and drawing from nature to create beautiful but uncomplicated dishes that burst with colour and flavour. Opening an eatery with his partner Florencia was a long-held ambition for Sam, and after several years running kitchens at some of Auckland’s best restaurants, the dream came true. That result is The Central Fire Station Bistro, and it's quickly become a must-visit for locals and visitors alike, and a true highlight of the region's outstanding food offerings.
Florencia Menehem - Pastry Chef / Owner Florencia’s foray into the world of culinary arts began in the family kitchen in Argentina. Learning from her grandmother Mena and great-aunty Biche, young Flor would insist on baking along with them to create plate after plate of sweet treats for Sunday afternoon teas. From the decadent brulee, tarts and mousses served in The Central Fire Station Bistro to the cakes, pastries and scones she fills her cabinets with next door at BAKED, Florencia is certainly regarded as one of Hawke's Bay's finest bakers, pastry chefs and cake artistes.
Dan Hillier-Jones - Pastry ChefDan has extensive pastry chef experience in NZ and Australia, and has previously worked locally at Bistronomy, Craggy Range and Mary's. Recently he has fallen in love with making the sourdough, despite being allergic to Rye flour (you'll often see him in glove and a mask when working with the raw dough). Dan has brought a classical but creative edge to Central Fire Station's desserts and shares both Sam and Flor's ideas about "real" uncomplicated food. Dan is an incredible asset to Central Fire Station, and we are thrilled to have his expertise in our kitchen.
